Butter, Ghee and Margarine

How water, milk solids, fat content and formulation affect cooking and baking.

Butter contains water and milk solids as well as fat. Ghee and clarified butter remove much of the water and milk solids. Margarine and spreads vary widely in fat and water content, so a soft tub spread may not behave like baking margarine or butter.
